  • Use a deep, heavy-duty roasting pan with a rack.
  • Put the breast side of the turkey up on the rack. Place it in a preheated oven, uncovered, at 350 degrees F
  • Roast it for about 4-5 hours.
  • Once it’s finished, turn off the oven and leave the turkey in the oven for about 5 minutes.
  • Remove the turkey from the oven and let the turkey rest for about 20 minutes before carving.

MATERIALS NEEDED INCLUDE

  • 12 lb whole turkey with skin on, fully thawed
  • 1 cup unsalted butter to soften
  • 3 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh thyme
  • 1/2 tbsp finely chopped fresh rosemary
  • 1/2 tablespoon finely chopped fresh sage leaves
  • 1/2 tablespoon finely chopped fresh tarragon
  • 5 cloves of minced garlic
  • 1/2 tbsp kosher salt or to taste
  • 2 teaspoons black pepper
  • 1 lemon cut into squares
  • 1/2 orange cut into squares
  • 1 small onion cut into wedges
  • 1 garlic clove cut in half
  • 3 cups water, plus more if needed

HOW TO ROAST A TURKEY BREAST

  • Step 1 – Place a rack in the lower third of the oven; Preheat to 475 degrees F.
  • Step 2 – Remove the entrails and neck of the turkey from the turkey hole and reserve for the marinade.
