- Use a deep, heavy-duty roasting pan with a rack.
- Put the breast side of the turkey up on the rack. Place it in a preheated oven, uncovered, at 350 degrees F
- Roast it for about 4-5 hours.
- Once it’s finished, turn off the oven and leave the turkey in the oven for about 5 minutes.
- Remove the turkey from the oven and let the turkey rest for about 20 minutes before carving.
MATERIALS NEEDED INCLUDE
- 12 lb whole turkey with skin on, fully thawed
- 1 cup unsalted butter to soften
- 3 tablespoons finely chopped fresh parsley
- 1 tablespoon finely chopped fresh thyme
- 1/2 tbsp finely chopped fresh rosemary
- 1/2 tablespoon finely chopped fresh sage leaves
- 1/2 tablespoon finely chopped fresh tarragon
- 5 cloves of minced garlic
- 1/2 tbsp kosher salt or to taste
- 2 teaspoons black pepper
- 1 lemon cut into squares
- 1/2 orange cut into squares
- 1 small onion cut into wedges
- 1 garlic clove cut in half
- 3 cups water, plus more if needed
HOW TO ROAST A TURKEY BREAST

- Step 1 – Place a rack in the lower third of the oven; Preheat to 475 degrees F.
- Step 2 – Remove the entrails and neck of the turkey from the turkey hole and reserve for the marinade. Place turkey, breast face down on a rack in a large roasting pan; Wipe dry with paper towels. In a small bowl, combine oil, salt, and pepper with the minced herbs. Rub the herb mixture all over the turkey, under the skin, and over the brisket.
